Piensa que, por aquel entonces, el caf\u00e9 se preparaba en la prensa francesa o a trav\u00e9s del filtrado. Cuando Gaggia incorpor\u00f3 una bomba manual para generar presi\u00f3n, la extracci\u00f3n del caf\u00e9 empez\u00f3 a ser m\u00e1s uniforme, <strong>obteniendo a su vez esa crema tan ic\u00f3nica en la superficie del caf\u00e9<\/strong>. Est\u00e1bamos ante la consolidaci\u00f3n del caf\u00e9 espresso como bebida cultural moderna.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"%C2%BFQue_significa_que_el_cafe_sea_expreso\"><\/span><strong><span style=\"font-family: 'trebuchet ms', geneva, sans-serif; font-size: 18pt;\">\u00bfQu\u00e9 significa que el caf\u00e9 sea expreso?<\/span><\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Un caf\u00e9 expreso sigue haciendo referencia a esa rapidez en su preparaci\u00f3n. Aun as\u00ed, el concepto actual del caf\u00e9 expreso a\u00f1ade otras connotaciones positivas como su sello de identidad. Por ejemplo, esa t\u00edpica crema superior que le debemos a las modificaciones de Gaggia, tal y como se\u00f1al\u00e1bamos anteriormente.<\/p>\n<p>No obstante, podemos enumerar una serie de caracter\u00edsticas asociadas al caf\u00e9 para que sea expreso.<\/p>\n<ul>\n<li><strong>Un sabor concentrado, rico e intenso,<\/strong> debido a la proporci\u00f3n entre caf\u00e9 y agua. Esto es as\u00ed porque las m\u00e1quinas de caf\u00e9 actuales extraen los aceites esenciales y los compuestos del caf\u00e9. As\u00ed el resultado tiene m\u00e1s cuerpo y profundidad.<\/li>\n<li>Una porci\u00f3n m\u00e1s peque\u00f1a, pero potente. La porci\u00f3n de espresso habitual se conoce como <em>shot, <\/em>y equivale a <strong>una peque\u00f1a taza con unos 25 o 30 mililitros de caf\u00e9 y crema<\/strong>. No obstante, su intensidad y contenido en cafe\u00edna hacen que este sorbo, aunque breve, sea energizante.<\/li>\n<li><strong>La famosa crema dorada<\/strong>, compuesta por aceites de caf\u00e9 y burbujas de aire, de textura aterciopelada y matices de sabor.
